TrufflesChocolate truffles without cream (or butter) Recipies for chocolate truffles are common, but they always include cream, and the truffles have to be stored in the fridge. Here's an alternative. 2 x tablespoons of icing sugar Melt the 125 gm of chocolate in a bowl. Mix in the other ingredients. You're left with something which is malleable and can be formed into chocolate truffle size pieces. Leave to set for a few hours at room temperature. Coat in (more) chocolate. Brandy can be substituted for amaretto. Finer ground almond equals smoother truffle, it can be sieved to make it finer. |
